Tuna Pasta - quick, easy low fat and healthy

Tuna Pasta

This is what you need

1-2 tins of tuna (in brine and not oil – chunks not flakes)
1 red onion
1 red pepper
1 yellow pepper
1 clove garlic
About 5 mushrooms
1 (comes in either a jar or cardboard packet) of passatra
1 bay leaf
Mixed herbs (about ½ teaspoon)
Olive oil- to fry

Pasta enough for 2 people

Pan 1 - Pasta
Put the pasta in boiling water and cook.

Pan 2 - Sauce
Chop up the peppers, onion finely. Fry in a small amount of olive oil in a non stick pan with the bay leaf and the mixed herbs. Cut up the mushrooms in slices and the garlic finely and add to the frying pan. Lightly fry. Once all is cooked (ie the onions are not hard) add the passatra and bring it to the boil and then let it simmer until the pasta is soft and ready, then turn heat off.

Drain the pasta once soft and add to pan 2!

Drain the tuna and add this to pan 2 with all the rest. Mix in lightly so the tuna is still chunky and then serve.

Season with salt and pepper. Sometime I squeeze lemon juice on it too.

I love making this as it takes lovely and is really quick to make – it basically takes about 10 mins!!

It is low fat, and quick to make!!
