Wasn't sure if I dare mention the Chrimbo word just yet, hence the title!!:p

It's years since I made a Christmas cake and am thinking of doing one this year. Just wondering who on HP makes their own and when do you start it off? I know I used to leave the fruit to soak in the alcohol for quite a while and then leave the cake to stand several weeks before icing, but can't remember the time scales. Also, do you always follow the same recipe each year or do you 'tweak' it for variety? 🙂

I make my own! It's best kept for a minimum of 2 months to mature (well wrapped) having been duly treated with brandy - even having soaked the fruit for a few days - for that I use wine, fruit juice or tea.

I occasionally vary the fruits I use, or the nuts, but keep to the same quantities, because they work!

Have fun - and I shall imagine the beautiful concoction that Fleur shos us on your table on the due date!!!
