Scottish oatcakes

I thoght I'd have a shot at making Scottish oatcakes this weekend. But all the recipes I've found contain lard or dripping. As a vegetarian, that would be no good for me.

I wonder if I can just use margarine in place of the lard. Does anyone know if it would work? No doubt it wouldn't be authentically Scottish, but that's not really important to me.

Thanks in advance for any advice.

I use sunflower oil which is healthier than using buter or marg. I have not made Scottish oatcakes per se but oat biscuits turn out quite tasty and light. Don't see why it shouldn't be fine for oatcakes. Worth a try perhaps!

I've made oatcakes loads of times. The recipe I use is vegan and wheat-free. It's very similar to [url]this one[/url]. Olive oil gives them a lovely golden flavour. I've tried palm oil (which is what you get in the shop-bought ones) but got rightly told off by a friend because [url]palm oil crops kill orangutans[/url]. So I never used that again!

Thanks for your replies and suggestions, Jnani and MissDawes. I noticed that the oatcakes I bought in Tesco contain palm oil. I'm aware of the issues surrounding palm oil, which is one of the reasons I wanted to try making my own.

After posting my question, I also found this recipe: [url]Traditional Scottish Oatcakes[/url]. It says to use butter rather than margarine, but I used margarine and they turned out fine. In fact, they were excellent, although I says it myself.

I'll maybe try sunflower oil next time.
