Recipe for moist, healthy banana cake anyone?

Hi all

I found a recipe for banana loaf in a book which I'm going to try, but I want one that is really moist and wondered if anyone had such a recipe?

I don't cook much you see!

Or.....fat free banana cake?! A lady at work mentioned this to me, but she's lost the recipe. Don't want to add fake sweeteners though.

well banana's are very high in carbs so not so healthy

one also must be aware not to eat to much fruit due to high sugar levels a friend of mine as worn out her pancreas thinking she was eating healthly but the organ could not take all the sugar from the fruits she was eating.

Carbohydrates are essential for a healthy diet - how can you say that something isn't healthy because of naturally occuring carbs in fruit?!

In fact, bananas contain no fat, sodium or cholesterol. Bananas are rich in vitamin B6 and they are a good source of fibre, vitamin C, magnesium and potassium. They are an easy to digest form of carbohydrate, which is our body's main source of energy.

Cake in general isn't the healthiest snack obviously, but I wanted to make something more nutritious than the stuff in the shops.

Hiya Star!

I use this recipe and adapt it to use bananas (ususally when i brought too many and they need using up!)

Its healthy and deelish and most of all, it is really easy to make!!!

Heat oven to 180

1 cup of all bran
1 cup milk (soya or skimmed)
1 cup of wholemeal self raising flour
1 tablespoon soft brown sugar (i dont put this in because im not very sweety and the sugar from the fruit sweetens it enough for me.)
1 cup of any dried fruit: pitted dates (my fave) chopped dried figs, raisins, sultanas. u can also put sunflower seeds or a mug of mashed banana.

Just soak bran with milk for a couple of mins, add other ingredients, mix well and pour into a well greased 1LB tin loaf and pop in the oven!

The cake is soo versitile!

Last one I made was half and half banana and dates. It was booty! The banana stays mushy in the cake !
Yummmmmmmmmmmm!!!

Oh btw-it needs to be in for 1 - 1 and a quarter hours (until a sharp knife comes out clean)

Tried it and it is lush - thank you. Like to have something tasty for the granchildren when they come. I used chopped apricots (only dried fruit I had in the house) and banana, and the kids loved it.

I hads a similar recipe from slimming World once, called Weetabix cake or something!!

I'll definitely try this. I did make one at the weekend from another recipe but didn't cook it for long enough so it's almost raw in the middle!!! Nevermind.
