For years I have been making this cake , which is probably about as easy as it gets, and also the ingredients are great ........
thought I would share it here !
I'm afraid it has the uninspired name of 'Allbran loaf ' !
I use an ordinary sized mug for the 'cup'
1 cup Allbran
1 cup skimmed milk / soya milk
Soak these together with half teaspoon mixed spice, a few drops of vanilla essence or extract, and a few drops of almond essence if liked, for about an hour.
The bran will be now all broken down.
Add 1 cup wholemeal flour, half cup of brown sugar, 1 cup of dried mixed fruit.
Mix it all together well.
Put into greased and lined 1 lb loaf tin, bake at 190 degrees for an hour.
I usually double up the ingredients and make two at once.
Take my word for it - this cake is fabulous -
I love it with butter ( oops ) or peanut butter on.

In case that is confusing, it is skimmed milk OR soya milk, but it works better with skimmed milk. !

Doesn't all the sugar and the fructose from fruit turn to fat once it is in our bodies?;)

Only if you don't use up the calories that the cake contains .......
any extra calories, from whatever food source will be deposited as fat if our intake exceeds our metabolic usage.
Therefore, I would prefer to have the odd treat, and pound away on my cross trainer, getting many other benefits from exercise too !
So, you CAN have your cake and eat it !

I have this cake (posted somewhere on here) but I dont put the sugar in. I just put 1 cup of dried fruit (usually dates)
Ithink it is sweet enough but there again I have never put the sugar in so I bet I dont miss it!
Try it and make it even healthier!!

Perhaps if I explain the background to this it will become clearer why I have posted this recipe, which in hindsight I wish I hadn't !
Since the age of 13 I have battled, and that is no exaggeration, to overcome a severe psychological problem with food - I was a compulsive eater, and as anyone who knows that has experienced this, it is an addiction that you learn to live with ......... literally having to face and consume that very thing that you are addicted to several times a day must make this the hardest of all.
Gradually over the past 25 years I have won the struggle, for the most part leaving behind the days that I used to pray to become anorexic and hate myself for not having the willpower to just stop eating, ridiculous though that sounds. And apologies to anorexics.
During those years I tried every approach I could think of to 'cure' myself, from straightforward diets, to exercise, to much work on my self esteem and approach to life, and of course it was the latter that really helped and transformed me from the emotionaly crippled wallflower that I used to be into the person I am happy to be today .
My problems with food used to mean that I ate a lot of processed junk, and I have gradually improved my diet, so that now I eat wholegrains, fruit and veg, no meat, avoid artificial additives and sweeteners, etc etc ........... I have read all the books and even studied nutrition, and physiology.
But I am not perfect, and I do still have a sweet tooth. So this recipe suits me right now, until I can become the ideal version of myself, and eat no sugar, no wheat etc etc. !
Sorry for this load of blah, but I did feel a bit stupid for posting this, realising that it would not fit into many of you more enlightened folks diets , but just maybe there is someone out there who might find it a good recipe for them, and then who cares if I have a red face !!

Hi Ru,
Don't for one moment feel red-faced for being who you are. It is not a crime to use sugar in a recipe. It does not make you a 'bad' or a 'lesser' person in any way, and I'm sure those mega-healthy eaters out there will agree with that.
And I think it was exceptionaly brave of you to share your story, so thank you!

If it was Ruster, I apologise but no harm was meant. Its just that I know how u like to keep healthy and stuf so I thought that....oh well..it doesnt matter.

What a fantstic recipe! and it is so easely ammendable, instead of bran (wheat) onecan use oat bran and instead of wholemal flour(wheat) one can use rice or potato or buckwheat (not wheat!) flour (or any other for that matter). Half a cup of brown sugar ist not a great deal, but can be left out.
So, I am not quite sure where the problem is? And as with any cakes/biscuits/desserts/chocolate they should be seen as a treat, once in while (rather than daily).

Hi Tigerbee and Tx ........... no offence taken - first thing this morning I was bleary eyed and not being particularly eloquent !
Also perhaps a tadge oversensitive, as befits one with such issues over food ... sigh.
Anyway, I love all the suggestions about modifying the recipe, and shall bear that in mind when I make the next batch ........

Ru- I can understand your battles with food as I've been both anorexic, AND a compulsive (binge) eater (which occurred when I started the "recovery" process. I know what it's like to be 4 stone underweight- and 3 and a half stone overweight...neither of these eating disorders are any less emotionally painful than the other and I can appreciate your struggles.
I have only just managed to pull myself out of the awful binge cycle by eliminating unecessary stress and emotional trauma, making clear goals about what I want to achieve in my life and making small steps to achieve them, and finally; going on a detox to undo all the damage I did by stuffing it with convinience food, eating a SUPER healthy diet and doing exercise everyday. So far, I've lost a stone in three weeks and I'm going strong with the willpower! This is coming from someone who used to be able to eat two 450g chocolate slabs a day!!!!!
If I may say so, I think you're doing superbly well as I'm sure everyone else agrees! I shouldn't worry about being a "perfect" eater, I used to go to a homeopath who swore that she used to eat absolutely impeccably- until one day at easter we were just going out the door when her husband shouted " I've just bought some creme eggs, shall I leave them in the kitchen or do you want a couple now?" Needless to say she was a bit red after that!
I don't think anyone could never eat a cake/chocolate bar, I mean Gillian McKeith admits to a occasional doughnut for heavens sake!!

Thanks for the recipe Ru, I will deffo try it out because for one thing Hubby is allergic to eggs which makes other cakes out of bounds for him.
