Butternut Squash Soup

Filling and comforting....bread not necessary 😉

1 Butternut squash
2 cloves garlic
2 onions
veg stock cube
1 teaspoon mixed spice
half grated nutmeg
salt and pepper
chopped fresh parsley/coriander

water to cover - and simmer till soft.

Partial blend. Allow to cool and mix in milk to preferable consistency...reheat but do not boil..pour into soup bowl, dash of natural yogurt and away you go.:)

do all of the other ingredients takeaway the taste of the butternut squash by any chance? i hear its very good for you but can't stand the taste lol

I cannot say it takes away the taste really......but I love it 😀

Low fat, nourishing and simple and can be frozen before adding any milk.

Further to that, you can take and chop up a whole variety of root vegetables - butternut squash or other pumpkin, potatoes, sweet potatoes, carrots, parsnips, turnips, swedes, even some onion and garlic - and roast them on a baking sheet, just brushed with a little olive oil and with some sprigs of fresh thyme and rosemary among them. When the vegies are soft, blend them up along with the leaves of the herbs and add a little vegetable stock to get the soup to the right consistency. Season to taste with black pepper, salt (not much) and any other spices you like, and serve with a dollop of soured cream or yoghurt (or vegan equivalent). If you experiment a bit to find the combination of flavours that you like best, this soup can be absolutely divine. 😉

Spice it up!

It is an amazing soup!
If you had some spices at the start of your cooking such as cayenne pepper (good for the joints) a bit of tumeric (antibiotic), bay leaves, cloves etc... You'll add a whole new range of flavour that will enhance the vegs!
