I bought some amaranth from the shop at the weekend - I've never seen it before and thought it sounded interesting. Does anyone know what I can do with it? I know I can use it instead of couscous or rice but was interested in how others used it and if you had any good recipes.

Hi,
Did you buy the flour? I had some flour and used it to make the most delicious cheese, spring onion and chili muffins. Fab stuff. Slightly nutty.

Sadly I have been unable to find the flour again. Where did you buy it?

It was the seeds not the flour. I got it in Morrisons in the free from/health food section. Not sure whether they had the flour or not - might be worth a look!

I've had some amaranth seeds in the cupboard for a while and haven't ventured to use it yet. It was apparently what the Aztecs lived on - their staple diet - so ther should be a lot one can do with it. Actually, I have googled [url]amaranth recipes [/url]and loads have come up.
