Hello, I'm new to gluten free baking and wondered if anyone could recommend a reliable gluten free flour for baking little cakes. I have seen Doves Farm in the supermarket and it's premixed so seems quite straightforward but does it work well? And also, what is xanthum gum? Many thanks, newbie2.
Dove's Farm products are excellent.
The problem with gluten free 'flours' is that cakes and breads made with them tend to be very crumbly - which is where xanthum gum comes in.
It is a product made from fermented sugar, used for loads of things, but in gluten free baking, it helps stick things together and gives cakes and breads a texture more like those made with traditional flours.
If you want more info, look on google - millions of helpful sites on there, including this one: 10 Facts about Xanthan Gum, a very popular food additive | Fooducate.
Agree with Derek, doves farm flours are good.
xantham gum works to an extent, but it depends what your baking.
You can also get "egg replacement powder" when making cakes (if you don't actually want to use eggs) and that will help bind things together. There are several different brands of that and each one has differences in how much powder is equivalent to 1 egg etc. so read the instructions.
There's also a good book called "Bread Matters" by Andrew Whitley, which not only gives a background and in depth discussion about the constituents of breads and why commercial breadmaking is so problematic for people's health, but also gives recipes for making your own bread the natural way, as well as including recipes and information about how to make gluten free breads, with full explanation of the flours and techniques to use etc.

Thanks for the book, Giles. I've just ordered it from the library!
Many thanks
Thank you for your replies and advice. I'll buy some of the Doves Farm flours as I can get them easily and will experiment with xanthum gum. I also need to learn how to spell it! Many thanks again.
