Hello, my daughter has recently been diagnosed gluten intolerant and I've been searching for really simple cupcake recipe books online to use with her. The honeybuns book looks quite complicated with long ingredients lists and the introduction to the Artisanal one seems quite complicated for a beginner but has anyone tried the one called icupcake as the 'Look Inside' bit seems quite easy to follow and the photo looks really yummy? Thanks for any suggestions, newbie2.
Here's a recipe I use myself for making muffins/cup cakes for my other half who avoids gluten and dairy...
(makes 12)
o 3oz 'Pure' spread
o 3oz light soft brown sugar
o 6oz gluten free plain flower (I use doves farm)
o 3tbsp egg replacement powder (check the packet instructions as different powders need different amounts) - equiv. 1 large or 2 small eggs
o 3tsp baking powder
o 1/2 pint unsweetened soya milk
+ any other 'bits' you want to put in like chocalate chips etc. as desired
1. Put paper cases in muffin tray and pre-heat oven to 200 degC
2. Cream the spread and sugar in a bowl until 'fluffy'
3. Sift the flour, egg powder and baking powder into the mix
4. Mix with wooden spoon until resembles breadcrumbs
5. Pour in milk (prob. just short of 1/2 pint) and keep mixing until consistency like buttercream/butter icing i.e. sticky but runny. Whip it up to get air into it.
6. Divide the mixture evenly into the 12 cases
7. Bake for approx 18 minutes
8. Carefully remove and cool on a wire rack.
As with all gluten free baking, you may have to adjust things slightly and play around till you get the hang of it and a feel for what works and what doesn't. This one I devised after adapting a traditional muffin recipe, and it works for me. 🙂

Thanks Giles, we'll give it a try. Am still tempted by the photo on the icupcake book though, as is my daughter - it looks delish and it claims to be dairy free too aswell as free from gluten and wheat. Thanks for your recipe though, we're going to try it at the weekend.
