...might be a good place to find and post alternatives to various products people have intolerances to... dairy, gluten etc...

We already have the following forums:

Allergies
Digestive Disorders
Diet and Nutrition
Recipes

Would one of these not suffice?
Or perhaps changing the name of one of these would suit e.g. "Allergies and Intolerances"?

Yeah, they are appropriate forums, I just thought with the high level of intolerance's these days a separate forum might be justified.

Then again if we have a forum for every topic we'd have thousands of them...

It's more a case of, if we have a lot of members posting about a particular subject and there's not an obvious forum for it, then we either need a new forum or we need to expand/rename an existing one. Whlist we do get discussions of this nature, I haven't myself observed it being high volume or being posted in various different places because people didn't know where to post. Mike's more than willing to create or rename if there is a need, but we just need to justify that there is a need first.

Indeed, and that's why renaming/expanding an existing forum is a possibility.

How about Intolerances and Hypersensitivities. Then this will cover everything becomes most people have more than one symptoms which would otherwise come under more than one topic.
