Garlicky White Beans with Kale and Parmesan

Garlicky white beans with kale and parmesan This dish is ultimate comfort food for me. It is incredibly flavoursome, creamy, and just really bakes my biscuit! Its a doddle to make and is potently powerful too. Serves 3-6 1 can of cannelini beans - drained 1 can of butter beans - drained 2 cloves of garlic - very finely chopped 2 large handfuls of curly kale 2 tablespoons of grated parmesan Sea salt to taste Olive oil Add the chopped garlic to a pan with a little olive oil, and a good pinch of sea salt. Saute on a high temperature, and this is one of those rare occasions that I encourage you to let the garlic go brown. This gives a unique and distinct smokey flavour. At this point, add the beans, and tear in the curly kale (literally tearing it into small pieces straight into the pan). Continue to saute until the kale wilts. At this stage, stir in 1 tablespoon of the parmesan, and mix well. Serve in a dish and sprinkle the remaining parmesan on top. Heart & Circulation - High cholesterol: garlic reduces LDL, the high fibre content of the beans helps to reduce cholesterol from the gut before it gets absorbed. Digestive system - healthy gut flora, constipation: high fibre content aids regularity, inulin in garlic and starches in beans help to strengthen good bacteria in the gut.

WOW!!!!! Looooooooove wild garlic. Especially a wild garlic and walnut pesto!!! 😉

Yeah, I've heard a lot about Wild Garlic Pesto ~ haven't tried it yet though...:) I suppose lots of tiny adjustments could be be made by using different nuts and oils..... ? I'll have to give it a go 🙂 !

Looks simple and delicious - thanks, Dale! And thanks WildStrawberry for stepping all over his recipe - baby spinach seems a perfect substitute for someone who dislikes kale!
