My kids do tend to have a lot of sandwiches, though unfortunately they can't have peanut butter or other nut butters on them and they're a bit fussy with fillings so tend not to have anything particularly exciting on them. They sometimes have wraps or pita bread and occasionally Ryvita crackers or similar instead of bread for variety.
I also sometimes make pasta, rice or cous cous salads with beans and chopped up cucumber or carrots in.
Cold pizza is also one of their favourites. If I make pizza for dinner and there's some left over I pop slices in foil in the freezer so they can take it to school. It doesn't have to be unhealthy if you make your own.
As well as these 'mains' they also take 2 pieces of fruit and something like a yoghurt as well as a treat.
